- Preheat your grill to medium-high heat, around 400°F (200°C). Allow at least 10-15 minutes for it to reach this temperature.
- Rub the flank or skirt steak generously with olive oil and sprinkle Dan-O’s seasoning evenly across the meat. Let marinate for about 10 minutes.
- In a mixing bowl, combine the corn, mayonnaise, sour cream, cotija cheese, lime juice, chopped cilantro, and chili powder. Stir until well mixed.
- Grill the marinated steak for about 4-5 minutes on one side. Flip and grill for another 4-5 minutes for medium-rare doneness.
- Remove the steak from the grill and let it rest for 5 minutes on a cutting board.
- Warm your corn tortillas on the grill for about 30 seconds per side until slightly charred.
- Slice the rested steak into thin strips. Assemble tacos with the sliced steak and creamy corn mixture. Serve immediately.
