For the Steak
  • 1 lb Flank or Skirt Steak Chicken or turkey is a great leaner alternative.
  • 2 tbsp Olive Oil Used to rub the steak.
  • 1 tbsp Dan-O’s Seasoning Substitutable with garlic powder, paprika, and black pepper.
For the Corn Mixture
  • 1 cup Corn Fresh corn is best, but frozen works in a pinch.
  • 1/4 cup Mayonnaise
  • 1/4 cup Sour Cream
  • 1/4 cup Cotija Cheese Optional; feta or queso fresco can be used instead.
  • 1 tbsp Lime Juice
  • 2 tbsp Chopped Cilantro
  • 1 tsp Chili Powder Adjust to taste.
For the Tacos
  • 8 pieces Corn Tortillas Warm them on the grill for an authentic touch.

Step-by-Step Instructions
  1. Preheat your grill to medium-high heat, around 400°F (200°C). Allow at least 10-15 minutes for it to reach this temperature.
  2. Rub the flank or skirt steak generously with olive oil and sprinkle Dan-O’s seasoning evenly across the meat. Let marinate for about 10 minutes.
  3. In a mixing bowl, combine the corn, mayonnaise, sour cream, cotija cheese, lime juice, chopped cilantro, and chili powder. Stir until well mixed.
  4. Grill the marinated steak for about 4-5 minutes on one side. Flip and grill for another 4-5 minutes for medium-rare doneness.
  5. Remove the steak from the grill and let it rest for 5 minutes on a cutting board.
  6. Warm your corn tortillas on the grill for about 30 seconds per side until slightly charred.
  7. Slice the rested steak into thin strips. Assemble tacos with the sliced steak and creamy corn mixture. Serve immediately.
