Preparation and Grilling
- Cut the ends off the zucchini and slice lengthwise into 1/2-inch strips.
- Sprinkle salt onto the zucchini slices and let them sit for about 20 minutes.
- Preheat your grill to medium-high heat (around 400°F or 200°C). Brush both sides of the zucchini with olive oil.
- Grill the zucchini slices for about 10-15 minutes, flipping halfway through.
- Remove the grilled zucchini, top with crumbled goat cheese and sprinkle with fresh basil.
- Drizzle honey over the grilled zucchini and add freshly cracked pepper to taste.
