Ingredients
  

For the Zucchini
  • 2 medium Zucchini Yellow squash can be substituted.
  • 1 tablespoon Salt Essential for enhancing flavor.
  • 2 tablespoons Olive oil Can substitute with avocado oil.
For the Topping
  • 4 ounces Goat cheese Crumbled, feta can be used instead.
  • 1/4 cup Fresh basil Chopped, can use parsley if needed.
  • 2 tablespoons Honey Agave or maple syrup are alternatives.
  • to taste Pepper Freshly cracked.

Method
 

Preparation and Grilling
  1. Cut the ends off the zucchini and slice lengthwise into 1/2-inch strips.
  2. Sprinkle salt onto the zucchini slices and let them sit for about 20 minutes.
  3. Preheat your grill to medium-high heat (around 400°F or 200°C). Brush both sides of the zucchini with olive oil.
  4. Grill the zucchini slices for about 10-15 minutes, flipping halfway through.
  5. Remove the grilled zucchini, top with crumbled goat cheese and sprinkle with fresh basil.
  6. Drizzle honey over the grilled zucchini and add freshly cracked pepper to taste.
