Method

Step‑by‑Step Instructions
  1. Start by bringing a pot of salted water to a rolling boil. Add the frozen cheese tortellini and cook according to package instructions, usually about 10 minutes, until they are tender and float to the top. Once cooked, drain the tortellini and set them aside to cool while you prepare the dressing.
  2. In a large mixing bowl, combine the mayonnaise, red wine vinegar, salt, oregano, garlic powder, and crushed red pepper. Whisk these ingredients together until smooth and creamy, ensuring there are no lumps.
  3. Once the cooked tortellini have cooled down, add them to the bowl with the dressing. Toss in the pepperoncini peppers, grated Parmesan cheese, chopped red onion, cooked and crumbled bacon, and halved grape tomatoes. Mix gently until every ingredient is well-coated in the creamy dressing.
  4. Using a large spoon or spatula, carefully toss all the ingredients in the bowl until they are evenly distributed. Serve immediately or cover and refrigerate until ready to serve.
  5. When ready to enjoy your Grinder Tortellini Salad, give it a final gentle toss. Transfer to a serving bowl and garnish with fresh herbs or an extra sprinkle of Parmesan cheese.
