Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground chicken, rolled oats, applesauce, chopped onion, chopped bell pepper, and minced garlic. Stir gently.
  3. Add in the egg, ketchup, Worcestershire sauce, and Dijon mustard and sprinkle in the thyme, rosemary, smoked paprika, salt, and black pepper.
  4. Gently mix all ingredients until just combined.
  5. Let the meatloaf mixture rest for 5-10 minutes.
  6. Prepare a 9x5 inch loaf pan by lightly coating it with cooking spray or olive oil.
  7. Transfer the meatloaf mixture into the prepared loaf pan and press down to create an even surface.
  8. If using a glaze, mix ketchup with apple cider vinegar and spread evenly over the meatloaf.
  9. Bake in the preheated oven for 60-75 minutes until the internal temperature reaches 165°F (74°C).
  10. Allow the meatloaf to rest in the pan for 10-15 minutes before slicing.
