Ingredients

For the Casserole
  • 1 lb Ground Beef A rich protein source; substitute with ground turkey or chicken for a lighter option.
  • 1 small Onion (finely chopped) Adds aromatic flavor; sauté until translucent for enhanced sweetness.
  • 2 cloves Garlic (minced) Infuses depth and pungency into the dish; garlic powder can be used in a pinch.
  • to taste Salt and Pepper Essential seasonings that balance flavors; adjust according to your personal taste.
  • 1 tbsp Dried Italian Seasoning Elevates savory notes; fresh herbs can be swapped in for a more vibrant flavor.
  • 2 cups Frozen Mixed Vegetables Provides nutrition and color; feel free to use fresh options like carrots, peas, or corn.
  • 10.5 oz Cream of Mushroom Soup Keeps the casserole moist; a homemade cream sauce can be an excellent alternative.
  • 3 cups Mashed Potatoes The comforting base of the dish; fresh marked by the best texture, especially if using leftovers.
  • 1/4 cup Milk Enhances the creaminess of the mashed potatoes; replace with broth for a dairy-free version.
  • 2 tbsp Butter Adds richness to the potatoes; olive oil works well for a lighter substitute.
  • 1/2 cup Shredded Cheddar Cheese Melts deliciously for a cheesy topping; try mozzarella or Monterey Jack for a different twist.
  • to taste Parsley or Green Onions (for garnish) Brightens the dish with color and freshness.

Method

Step-by-Step Instructions
  1. Peel and cube the potatoes, then place them in a large pot of salted water. Bring to a boil and cook for 15–20 minutes until fork-tender. Drain and mash with milk, butter, and a pinch of salt and pepper until creamy.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté for 3–4 minutes until translucent. Add ground beef, cooking for 6–8 minutes until browned. Drain excess fat.
  3. Stir in tomato paste, dried Italian seasoning, and desired spices. Pour in broth and frozen mixed vegetables, simmer for 5–7 minutes until thickened. Season with salt and pepper.
  4. Preheat the oven to 375°F (190°C). In a greased baking dish, spread half of the mashed potatoes. Layer meat mixture over potatoes, sprinkle with cheese. Top with remaining mashed potatoes and another layer of cheese.
  5. Bake uncovered for 25–30 minutes until cheese is melted and bubbly, with a golden brown top.
  6. Cool for 5–10 minutes before garnishing with parsley or green onions before serving.
