Cooking Steps

  2. Add diced onion and minced garlic. Cook for 3–4 minutes until onion is translucent.
  3. Stir in diced potatoes and cook for an additional 2–3 minutes.
  4. Add beef broth and bring to a gentle boil. Reduce heat and simmer uncovered for about 15 minutes.
  5. Whisk together flour and heavy cream in a bowl until smooth.
  6. Gradually pour flour and cream mixture into the pot, stirring continuously. Simmer for another 5 minutes.
  7. Stir in salt, black pepper, and dried thyme. Incorporate frozen mixed vegetables and heat through for about 5 minutes.
  8. Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley if desired.
