Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a medium-sized baking dish with olive oil or cooking spray.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion for about 5 minutes until translucent. Add minced garlic and sauté for another minute until golden.
  3. In a mixing bowl, whisk together eggs, milk, and Italian herbs. Season with salt and pepper, then add sautéed onion and garlic.
  4. Fold in the sliced zucchini, cheddar cheese, and mozzarella cheese until well combined. Reserve half of the Parmesan cheese for the topping.
  5. Pour the mixture into the prepared baking dish and sprinkle the reserved breadcrumbs and remaining Parmesan cheese on top.
  6. Bake uncovered for 30 to 40 minutes until the top is golden brown and a toothpick inserted comes out clean.
  7. Remove from the oven and let cool for 5 to 10 minutes before serving.
