Method
 

Preparation
  1. Combine flour and salt in a bowl, cut in chilled butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water, mixing until a dough forms; refrigerate for at least 1 hour.
  3. Preheat the oven to 400°F (204°C).
  4. Core and slice apples into 1/2-inch pieces, mix with sugars, flour, cinnamon, lemon juice, and zest.
  5. Roll out one disc of dough into a 12-inch circle and fit into a 9-inch pie plate.
  6. Spoon the apple filling into the crust, mounding it slightly in the center.
  7. Cover the filling with the second disc of rolled dough, trim, fold, and crimp the edges.
  8. Brush top crust with egg wash, sprinkle with sugar, and cut vents for steam.
  9. Bake at 400°F for 25 minutes, then reduce to 375°F and bake for an additional 30-35 minutes.
  10. Remove from oven and cool on a wire rack for at least 3 hours.
