Preparation
- Combine flour and salt in a bowl, cut in chilled butter until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until a dough forms; refrigerate for at least 1 hour.
- Preheat the oven to 400°F (204°C).
- Core and slice apples into 1/2-inch pieces, mix with sugars, flour, cinnamon, lemon juice, and zest.
- Roll out one disc of dough into a 12-inch circle and fit into a 9-inch pie plate.
- Spoon the apple filling into the crust, mounding it slightly in the center.
- Cover the filling with the second disc of rolled dough, trim, fold, and crimp the edges.
- Brush top crust with egg wash, sprinkle with sugar, and cut vents for steam.
- Bake at 400°F for 25 minutes, then reduce to 375°F and bake for an additional 30-35 minutes.
- Remove from oven and cool on a wire rack for at least 3 hours.
