Method
 

Prepare Lavender Syrup
  1. Combine water, honey, and culinary lavender in a saucepan and bring to a simmer for 5 minutes.
  2. Let the syrup steep for 20 to 40 minutes to infuse the lavender flavor.
  3. Strain the syrup through a mesh sieve into a glass jar, discarding the lavender flowers.
Assemble Latte
  1. Pour lavender syrup into a glass and add the cooled espresso or coffee.
  2. In a separate container, froth heavy cream and milk together until light and fluffy.
  3. Fill the glass with ice and top with the frothed milk, then serve immediately.
