- In a large mixing bowl, combine heavy cream, sugar, Biscoff cookie butter, mascarpone, ground cinnamon, and vanilla extract. Beat on medium-high speed until stiff peaks form, about 3-5 minutes.
- Brew a strong cup of coffee or espresso and cool to room temperature. Transfer to a shallow dish.
- Quickly dip each Biscoff cookie into the cooled coffee and arrange in a single layer in a 9x9 baking dish.
- Spread half of the whipped cream mixture over the layer of soaked cookies.
