  2. Brew a strong cup of coffee or espresso and cool to room temperature. Transfer to a shallow dish.
  3. Quickly dip each Biscoff cookie into the cooled coffee and arrange in a single layer in a 9x9 baking dish.
  4. Spread half of the whipped cream mixture over the layer of soaked cookies.
