Ingredients

For the Bread
  • 1 loaf French Bread Substitute with brioche or challah for a sweeter flavor.
For the Custard
  • 5 large Eggs Essential for richness and forms the custard base.
  • 1 cup Half-and-Half Can replace with whole milk for a lighter version.
  • 1 cup Whole Milk Any milk type works, including dairy-free alternatives.
  • 1 teaspoon Vanilla Extract Use pure vanilla for the best results.
  • 2/3 cup Granulated Sugar Extra is needed for caramelizing the top.
  • 1/4 teaspoon Ground Cinnamon Optional; can swap with nutmeg.
  • 1/4 teaspoon Ground Nutmeg Omit if undesired or substitute with cardamom.
For Assembly
  • 1/4 cup Unsalted Butter Adds richness and prevents sticking.
  • Maple Syrup For serving; optional whipped cream or berries for decoration.

Equipment

  • 9x13 inch baking dish
  • mixing bowl
  • whisk
  • spatula
  • kitchen torch

Method

Step-by-Step Instructions
  1. Begin by generously buttering a 9x13-inch baking dish, ensuring the entire surface is coated to prevent sticking. Arrange thick slices of French bread in an overlapping layer, filling the dish completely.
  2. In a large mixing bowl, whisk together the five large eggs with one cup each of half-and-half and whole milk. Add in the vanilla extract, sugar, ground cinnamon, and nutmeg until smooth.
  3. Pour the custard mixture evenly over the layered bread slices, ensuring all pieces are saturated. Cover with plastic wrap and refrigerate overnight.
  4. Preheat your oven to 350°F (175°C). Remove plastic wrap and dot the surface of the bread with small pieces of butter. Sprinkle granulated sugar evenly over the top. Bake for 35-40 minutes.
  5. After baking, take the dish out and sprinkle a thin layer of granulated sugar over the top. Using a kitchen torch, caramelize the sugar until it forms a crispy, golden layer.
  6. Allow to cool for a few minutes before slicing into squares. Drizzle with warm maple syrup and consider adding a dollop of whipped cream or fresh berries.

Using slightly stale bread helps it absorb the custard better. Store leftovers in an airtight container for up to 3 days.
