Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine the chicken with soy sauce, sesame oil, ginger, and garlic. Mix well to coat the chicken evenly. Cover and let marinate in the refrigerator.
  2. In a separate bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, rice vinegar, and honey/maple syrup for the Bang Bang sauce.
  3. Soak wooden skewers in water for 30 minutes if using. Thread marinated chicken onto skewers, alternating with optional pineapple chunks.
  4. Cook on a grill preheated to medium-high for 3-5 minutes on each side until chicken is cooked through. Alternatively, bake at 400°F (200°C) for 15-20 minutes, turning midway.
  5. Toss skewers in half of the Bang Bang sauce for coating or brush sauce on top when serving.
  6. Garnish with chopped green onions and sesame seeds before serving.
