Preparation Steps
- Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter until fully coated. Press the mixture firmly into a pie pan.

- Bake the crust for 8-9 minutes until lightly golden. Allow it to cool completely for about 30 minutes.

- Beat the softened cream cheese until smooth. Gradually mix in vanilla extract and powdered sugar. In a separate chilled bowl, whip the cream until soft peaks form.

- Fold the whipped cream into the cream cheese mixture until fully combined. Spread evenly into the cooled crust.

- Refrigerate the pie for 1-2 hours to set the filling.

- For the glaze, whisk cornstarch, sugar, gelatin, cold water, and lemon juice in a saucepan. Cook over low heat, whisking until thickened (3-5 minutes). Fold in hulled strawberries after cooling.

- Layer the cooled strawberry glaze and strawberries on top of the cream cheese filling. Chill until ready to serve.

- Slice and serve chilled, optionally garnished with whipped cream or fresh mint leaves.
