  • 2 cups Strawberries fresh or frozen work well
  • 2 cups Rhubarb prefer fresh, thawed and drained frozen will do too
  • 2 tablespoons Cornstarch can use all-purpose flour as a substitute
  • 1 tablespoon Lemon Juice no substitutes are recommended

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (177°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together all-purpose flour, granulated sugar, brown sugar, baking powder, and salt until combined. Cut in cold butter until it resembles coarse crumbs, then stir in vanilla extract.
  3. Press about two-thirds of the crumb mixture into the bottom of the prepared baking pan and bake for 10-12 minutes until slightly golden.
  4. In another bowl, gently combine strawberries and rhubarb with granulated sugar, cornstarch, and lemon juice until coated.
  5. Spread the fruit filling evenly over the partially baked crust and sprinkle the reserved crumb topping over it.
  6. Return to the oven and bake for an additional 40-45 minutes until golden brown and filling is bubbling.
  7. Allow to cool completely in the pan for 1-2 hours, then lift out using parchment overhang, slice, and enjoy.
