- Preheat your oven to 350°F (177°C) and line an 8x8 inch baking pan with parchment paper.
- In a large mixing bowl, whisk together all-purpose flour, granulated sugar, brown sugar, baking powder, and salt until combined. Cut in cold butter until it resembles coarse crumbs, then stir in vanilla extract.
- Press about two-thirds of the crumb mixture into the bottom of the prepared baking pan and bake for 10-12 minutes until slightly golden.
- In another bowl, gently combine strawberries and rhubarb with granulated sugar, cornstarch, and lemon juice until coated.
- Spread the fruit filling evenly over the partially baked crust and sprinkle the reserved crumb topping over it.
- Return to the oven and bake for an additional 40-45 minutes until golden brown and filling is bubbling.
- Allow to cool completely in the pan for 1-2 hours, then lift out using parchment overhang, slice, and enjoy.
