  • 1 lb boneless, skinless chicken thighs
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
For the Rice
  • 2 cups jasmine or basmati rice
For the Vegetables
  • 2 cups bell peppers sliced
  • 1 cup broccoli florets
For Garnish
  • 2 tablespoons green onions sliced
  • 1 tablespoon sesame seeds optional

Method
 

Directions
  1. Cook the rice according to package instructions, rinse until water runs clear, then simmer for about 15-20 minutes until fluffy.
  2. Heat oil in a large skillet over medium heat until shimmering.
  3. Sear the chicken thighs in the hot skillet for 6-7 minutes per side until golden brown and cooked through.
  4. In the skillet, add sweet chili sauce, soy sauce, garlic, and ginger. Simmer for 2-3 minutes until fragrant.
  5. Return the chicken to the skillet, coat with sauce, and simmer for another 2-3 minutes.
  6. In a separate pan, sauté bell peppers and broccoli in oil for 5-7 minutes until vibrant and tender.
  7. Assemble bowls with rice, chicken, vegetables, and garnish with green onions and sesame seeds.
