  • 1/2 cup Maple Syrup or agave nectar
  • 1/3 cup Coconut Oil melted or olive oil
  • 2 1/4 cups Self-Raising Flour or 2 1/4 cups plain flour + 3 tsp baking powder + 1/2 tsp salt
  • 1 cup Carrots finely grated
  • 1 tsp Cinnamon optional nutmeg
  • 1/2 cup Chopped Pecans toasted for extra flavor
For the Optional Topping
  • 1/2 cup Vegan Cream Cheese or non-vegan cream cheese
  • 1/2 cup Vegan Vanilla Yogurt or plain yogurt
  • 2 tbsp Extra Maple Syrup
  • 1 tsp Cinnamon

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 356°F (180°C).
  2. In a large mixing bowl, combine the mashed ripe bananas, maple syrup, and melted coconut oil. Mix until smooth and creamy.
  3. Fold in the finely grated carrots, ground cinnamon, and chopped pecans into the banana mixture.
  4. Gradually add the self-raising flour to your wet mixture and stir until just combined.
  5. Prepare a loaf pan by greasing it and lining it with parchment paper. Pour the batter into the pan.
  6. Place the loaf pan in the preheated oven and bake for 50-60 minutes.
  7. Once baked, let it cool for 10 minutes and then transfer to a wire rack.
  8. While the bread cools, mix together the optional topping ingredients until smooth and creamy.
