For the Marinade
  • 2 pounds Beef (chuck or brisket)
  • 1/2 cup Vinegar (white or apple cider)
  • 4 cloves Garlic (minced)
  • 1 tablespoon Grated ginger
  • 1 teaspoon Chili flakes adjust for desired heat
  • 2 tablespoons Brown sugar or honey/coconut sugar
For the Curry
  • 2 tablespoons Oil (vegetable or ghee)
  • 1 medium Onion (finely chopped) or shallots for milder taste
  • 2 tablespoons Tomato paste or fresh tomatoes
  • 1 cup Beef stock or vegetable stock
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Garam masala
  • 1 teaspoon Coriander powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Mustard powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Cinnamon powder
  • 1 teaspoon Paprika

Method
 

Marinating and Cooking
  1. In a large bowl, combine the vinegar, minced garlic, grated ginger, chili flakes, and brown sugar to create a flavorful marinade. Rub this mixture thoroughly over the beef pieces, ensuring they are well-coated. Cover and let it marinate for at least 1 hour, or overnight.
  2. Heat 2 tablespoons of oil in a large skillet over medium heat. Add the finely chopped onion and sauté for 5-7 minutes until softened and golden.
  3. Add the marinated beef to the skillet and sear for 5 minutes. Then, incorporate 2 tablespoons of tomato paste, mixing well. Cook for an additional 2-3 minutes.
  4. Pour in 1 cup of beef stock and bring to a gentle simmer over medium heat. Reduce heat, cover, and let cook for 30-45 minutes, until the beef is tender.
  5. Taste the sauce and adjust seasoning with salt and pepper if desired. Serve hot, paired with rice or paratha.
