Step-by-Step Instructions
  1. In a large bowl, combine jerk seasoning, olive oil, salt, black pepper, and lime juice to create a flavorful marinade. Coat the chicken thighs generously with this mixture and allow to marinate for at least 30 minutes.
  2. In a small saucepan over medium heat, combine apple cider vinegar, sugar, salt, red pepper flakes, and ground ginger. Stir until the sugar dissolves. Mix in diced fresh pineapple and refrigerate for at least 30 minutes.
  3. Preheat a large skillet over medium-high heat and add olive oil. Sear marinated chicken thighs skin-side down for 6-7 minutes until golden brown. Flip and cook for an additional 15-20 minutes until internal temperature reaches 165°F.
  4. Remove chicken from skillet and let it rest for 5 minutes. Serve topped with the tangy pickled pineapple.
