Method
 

Step-by-Step Instructions
  1. Preheat the oven to 425°F (220°C) and position the oven rack in the middle.
  2. Unwrap the turkey, remove any neck or giblets, and prepare it for spatchcocking.
  3. Mix olive oil, rosemary, thyme, sage, garlic, salt, and pepper in a small bowl and rub the mixture on the turkey.
  4. Place the turkey skin-side up on a baking sheet and roast for 1¼ to 1½ hours until cooked through.
  5. Remove the turkey from the oven, cover loosely with foil, and let it rest for 15 minutes before carving.
