  • 1 cup Ritz Crackers crushed; can substitute with saltines
  • 1 large Egg beaten
  • 0.5 cup Milk any type, including non-dairy
  • 0.5 cup Onion finely chopped; fresh or dried
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper freshly cracked preferred
  • 1 teaspoon Garlic Powder or fresh garlic for stronger taste
For the Sauce
  • 0.75 cup Ketchup low sugar or homemade preferred
  • 0.25 cup Brown Sugar can be replaced with honey or agave
  • 0.5 cup Apricot Preserves substitute with grape or cherry jelly
  • 1 tablespoon Worcestershire Sauce optional

Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan with cooking spray.
  2. In a large bowl, mix ground meat, crushed crackers, egg, milk, ketchup, onion, salt, pepper, and garlic powder until combined.
  3. Transfer the mixture into the loaf pan, shaping it evenly and bake uncovered for 1.5 hours until internal temperature reaches 160°F.
  4. Prepare the sauce by mixing ketchup, brown sugar, apricot preserves, and Worcestershire sauce. Spread half over meatloaf after 45 minutes of baking.
  5. Let the meatloaf rest for 15 minutes, slice, and serve with the remaining sauce.
