  • 2 tablespoons toasted sesame seeds for garnish

Step-by-Step Instructions
  1. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat for 1 minute until shimmering.
  2. Add 1 pound of ground beef, breaking it apart. Cook for about 5 minutes until browned and crispy.
  3. Stir in 4 minced garlic cloves and 1 tablespoon of freshly grated ginger. Cook for an additional minute until fragrant.
  4. Add 3 tablespoons of gochujang, 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 tablespoon of brown sugar, and a pinch of red pepper flakes. Stir for 1-2 minutes until bubbling and thickened.
  5. Let the beef and sauce mixture bubble for an additional 2-3 minutes, stirring occasionally until thick.
  6. Remove from heat and spoon the spicy beef mixture over warm short-grain rice in bowls.
  7. Top with shredded carrots, sliced cucumbers, and tangy kimchi.
  8. Garnish with chopped green onions and toasted sesame seeds. Serve immediately.
