Ingredients
  

For the Macarons
  • 1 cup Powdered Sugar Can be substituted with icing sugar
  • 1 cup Ground Almonds Almond flour can be used
  • 1 tablespoon Lemon Zest Fresh zest enhances taste
  • 3 large Egg Whites Ensure they're at room temperature
  • 1/2 cup Granulated Sugar Not replaceable
  • 2 drops Yellow Food Coloring Optional; can swap for turmeric
For the Filling
  • 1/2 cup Butter Vegan butter can be used
  • 1/4 cup Lemon Juice Fresh juice is ideal
  • 1 teaspoon Vanilla Extract Almond extract can be a twist
  • 1 cup Powdered Sugar Adjust to taste

Method
 

Instructions for Lemon Macaron
  1. Preheat the oven to 275°F (135°C).
  2. Line two baking sheets with silicone mats or parchment paper.
  3. Sift together ground almonds and powdered sugar.
  4. Whip the egg whites until stiff peaks form, adding granulated sugar gradually.
  5. Fold the almond mixture into the egg whites carefully.
  6. Pipe small rounds onto prepared baking sheets and let rest for 20 to 40 minutes.
  7. Bake for about 15 minutes and allow to cool.
  8. Cream together butter and powdered sugar, then add lemon juice and vanilla for the filling.
  9. Assemble the macarons with the filling.
  10. Let the assembled macarons rest in the refrigerator for at least 24 hours.
