  • 1 teaspoon Kosher Salt adjust to taste
  • 3 tablespoons Rice Vinegar or apple cider vinegar
  • 1 tablespoon Lime Juice or lemon juice
  • 1 tablespoon Honey or Sugar adjust as needed
  • 1 tablespoon Sesame Seeds or sunflower seeds
  • 2 tablespoons Coconut Aminos or Soy Sauce or tamari for gluten-free
  • 1 teaspoon Fish Sauce optional for vegetarians

Method
 

Step-by-Step Instructions
  1. In a small bowl, whisk together sesame oil, kosher salt, rice vinegar, lime juice, honey, sesame seeds, coconut aminos, and fish sauce until smooth.
  2. In a large mixing bowl, julienne the cucumber, mango, and cabbage. Chop the bell pepper and slice the jalapeño if using. Add chopped mint or cilantro.
  3. Pour the dressing over the vegetables and toss until well combined.
  4. Serve immediately or chill in the refrigerator for a couple of hours before serving. Re-toss before serving to maintain crunch.
