Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Gather your ingredients while the oven warms up.
- In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, ketchup, finely chopped onion, and green bell pepper. Add eggs, Worcestershire sauce, garlic powder, salt, black pepper, thyme, and oregano. Mix thoroughly.
- Shape the mixture into a loaf form and place in a greased loaf pan or a parchment-lined baking sheet.
- Bake for about 1 hour, until the internal temperature reaches 160°F (70°C). Allow to rest for 10 minutes.
- While the meatloaf is resting, heat olive oil in a skillet over medium heat and sauté sliced mushrooms until golden brown.
- Add beef broth to the skillet and bring to a simmer. Mix in cornstarch slurry and stir until thickened, seasoning with salt and pepper.
- Slice the rested meatloaf and serve topped with mushroom gravy, garnished with fresh parsley.

Notes
Mix thoroughly to avoid lumps in your meatloaf. Resting the meatloaf after baking improves flavor and moisture. Adjust gravy seasoning to taste.
