  • 2 medium chicken breasts about 1 pound
  • 0.25 teaspoon kosher salt adjust to preference
  • black pepper to taste
  • 1 teaspoon granulated garlic or garlic powder
  • 2 teaspoons dried oregano
For the Base
  • 3 tablespoons extra virgin olive oil EVOO
  • 0.5 medium onion diced
  • 3 cloves garlic minced or pressed
For the Orzo
  • 1 cup orzo pasta consider whole grain
  • 2 cups water
  • 0.5 teaspoon kosher salt
  • 2 tablespoons fresh lemon juice
For the Finish
  • 0.75 cup sundried tomatoes
  • 0.5 cup kalamata olives halved or sliced
  • 0.33 cup crumbled feta cheese
  • 1 tablespoon parsley and dill optional for garnish

Method
 

Step-by-Step Instructions
  1. Slice the chicken breasts into ¼ inch-thick pieces. Season with kosher salt, black pepper, granulated garlic, and oregano.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add seasoned chicken in batches and sear for 2-3 minutes until golden brown.
  3. Lower the heat and add the remaining olive oil. Add diced onion and sauté for 3-4 minutes, then stir in minced garlic.
  4. Stir in orzo pasta, kosher salt, water, and fresh lemon juice. Bring to a simmer and cook for 3-4 minutes, stirring occasionally.
  5. Return the browned chicken to the skillet along with sundried tomatoes and olives. Simmer on medium-low for 10-12 minutes.
  6. Remove from heat and top with black pepper, feta cheese, and parsley or dill. Serve warm.
