- Slice the chicken breasts into ¼ inch-thick pieces. Season with kosher salt, black pepper, granulated garlic, and oregano.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add seasoned chicken in batches and sear for 2-3 minutes until golden brown.
- Lower the heat and add the remaining olive oil. Add diced onion and sauté for 3-4 minutes, then stir in minced garlic.
- Stir in orzo pasta, kosher salt, water, and fresh lemon juice. Bring to a simmer and cook for 3-4 minutes, stirring occasionally.
- Return the browned chicken to the skillet along with sundried tomatoes and olives. Simmer on medium-low for 10-12 minutes.
- Remove from heat and top with black pepper, feta cheese, and parsley or dill. Serve warm.
