  • 8 ounces Swiss cheese About 2 cups shredded.

  • 1.5 cups low-sodium vegetable or chicken broth Moistens and binds the stuffing.

Method
 

Preparation Steps
  1. Cut or tear the loaf of French or Italian bread into 1-inch pieces and leave out overnight to dry or bake at 250ºF for 10-12 minutes.
  2. Preheat your oven to 375ºF and grease a 9x13-inch baking dish with butter.
  3. Trim and thinly slice the cremini mushrooms and dice the yellow onion.
  4. Melt 4 tablespoons of unsalted butter in a large skillet over medium heat and sauté mushrooms, onion, thyme, salt, and pepper for 8-10 minutes.
  5. Stir in baby spinach a handful at a time until wilted.
  6. Pour in low-sodium broth and scrape browned bits off the pan, letting it simmer.
  7. Toss the dried bread pieces with sautéed mixture and half the Swiss cheese in a mixing bowl.
  8. Spread the mixture in the greased baking dish and sprinkle the remaining Swiss cheese on top.
  9. Bake for 35-40 minutes in the preheated oven until golden-brown and heated through.
