Step-by-Step Instructions
  1. Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil over high heat. Add your chosen pasta and cook according to package instructions until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
  2. Char the Corn: In a medium skillet, melt 1-2 tablespoons of butter over medium-high heat. Add in your sweet corn and sauté for 8 to 10 minutes until golden brown. Remove from heat and stir in chili powder and smoked paprika, letting it cool slightly.
  3. Mix the Dressing: In a large bowl, combine mayonnaise with lime juice, creating a smooth dressing. Add crumbled cotija cheese, fresh cilantro, salt, and black pepper to taste.
  4. Combine Ingredients: Once the pasta and charred corn are cool, add them to the bowl with the dressing. Toss gently to coat everything evenly.
  5. Chill and Serve: Cover and refrigerate for at least 30 minutes to meld flavors. Toss before serving and adjust seasoning if necessary.
