- Cut day-old brioche or challah bread into 1-inch cubes and spread them onto a baking sheet.
- In a shallow bowl, whisk together the large eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, and kosher salt until slightly frothy.
- Gently add the bread cubes into the custard mixture, allowing them to soak for about 2 minutes.
