  • 1/2 cup Chopped Pecans reserve some for topping

  • 8 oz Cream Cheese (softened)
  • 1/4 cup Unsalted Butter (softened for glaze)
  • 1 cup Powdered Sugar
  • 2 tablespoons Milk
  • 1 teaspoon Extra Vanilla Extract (for glaze)

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan.
  2. Whisk together the flour, baking soda, salt, and cinnamon in a bowl.
  3. Mix the sugar and cooled butter together until creamy.
  4. Add eggs one at a time and whisk in vanilla.
  5. Fold in mashed bananas gently.
  6. Gradually add the dry ingredients to the wet ingredients, folding until just combined.
  7. Fold in optional dried fruits and pecans.
  8. Pour the batter into the prepared loaf pan and top with reserved pecans.
