Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. Mash 3 to 4 very ripe bananas in a large mixing bowl until mostly smooth with some small lumps.
  3. Whisk in 1 cup of granulated sugar, ⅓ cup of neutral oil, 2 large eggs, 1 teaspoon of vanilla extract, and ½ cup of plain yogurt into the mashed bananas.
  4. In a separate bowl, whisk together 1 ½ cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of salt, and 1 teaspoon of ground cinnamon.
  5. Gradually add the dry ingredients to the wet banana mixture, stirring gently until just combined.
  6. Fold in 1 cup of dried tart cherries (or fresh/frozen) and optional nuts.
  7. Pour the batter into the prepared loaf pan, and sprinkle with turbinado sugar if desired.
  8. Bake for 50–60 minutes, checking for doneness with a toothpick.
  9. Let the bread cool in the pan for about 10 minutes, then transfer to a cooling rack to cool completely.
