- Preheat your oven to 350°F (175°C).
- Blend fresh spinach with 1/4 cup of milk in a blender until smooth.
- In a large mixing bowl, whisk together whole wheat flour and baking powder.
- In a separate bowl, mash a ripe banana and add honey, eggs, vanilla extract, and the blended spinach mixture. Whisk until combined.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Line the muffin tin with paper liners and fill each cavity about 3/4 full with the batter.
- Bake in the preheated oven for 20-25 minutes. Check with a toothpick for doneness.
- Let the muffins cool in the tin for about 5 minutes before transferring to a wire rack. Add googly eyes candies to decorate.
