  • 2 cups fresh spinach for blending
  • 1 cup whole wheat flour can substitute with gluten-free flour
  • 1 tbsp baking powder ensure it's fresh
  • 1 large banana ripe
  • 1/4 cup honey or maple syrup adjust to taste
  • 2 large eggs
  • 1 cup milk can use plant-based milk
  • 1 tsp vanilla extract
For the Fun Toppings
  • 1 cup googly eyes candies for decoration
  • 1/2 cup chocolate chips optional
  • 1 tsp green food coloring optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Blend fresh spinach with 1/4 cup of milk in a blender until smooth.
  3. In a large mixing bowl, whisk together whole wheat flour and baking powder.
  4. In a separate bowl, mash a ripe banana and add honey, eggs, vanilla extract, and the blended spinach mixture. Whisk until combined.
  5. Pour the wet mixture into the dry ingredients and stir until just combined.
  6. Line the muffin tin with paper liners and fill each cavity about 3/4 full with the batter.
  7. Bake in the preheated oven for 20-25 minutes. Check with a toothpick for doneness.
  8. Let the muffins cool in the tin for about 5 minutes before transferring to a wire rack. Add googly eyes candies to decorate.
