Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and pat the chicken thighs dry. Season with kosher salt and black pepper.
  2. Heat olive oil and butter in an oven-safe skillet over medium-high heat. Sear chicken thighs skin-side down for 6-8 minutes until golden brown.
  3. Mix together Parmesan cheese, Italian seasoning, paprika, and red pepper flakes in a bowl.
  4. Flip the chicken and sear for 2-3 minutes. Remove from skillet and set aside.
  5. Reduce heat, melt remaining butter, and sauté minced garlic for about 60 seconds until fragrant.
  6. Return chicken to the skillet, spoon garlic butter over, then press the Parmesan mixture onto the chicken.
  7. Transfer to the oven and bake for 15-18 minutes, or until internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for 5 minutes, then garnish with chopped parsley before serving.
