Ingredients

For the Batter
  • 1/2 cup brown sugar Provides sweetness and moisture; can be substituted with coconut sugar for a lower glycemic index.
  • 1/4 cup granulated sugar Adds sweetness and lightens the batter; optional to reduce based on banana ripeness.
  • 1/2 cup unsalted butter, melted Adds richness and moisture; can be replaced with coconut oil for a dairy-free version.
  • 2 large eggs Binds the ingredients and adds structure; leave out for a vegan version and use flax eggs.
  • 1 teaspoon vanilla extract Enhances flavor; use pure vanilla extract for best results.
  • 1 1/2 cups mashed ripe bananas About 4-5 medium; overripe bananas work best.
  • 2 cups all-purpose flour Forms the structure; can substitute with whole wheat flour.
