Step‑by‑Step Instructions
  1. Pat the skirt steak dry, rub with olive oil, and season with salt, pepper, smoked paprika, onion powder, and cayenne. Let rest for 20 minutes.
  2. Combine softened butter with minced garlic, parsley, sea salt, and lemon zest in a bowl until well blended.
  3. Mix parsley, cilantro, minced garlic, olive oil, red wine vinegar, oregano, red pepper flakes, and salt and pepper for chimichurri, letting sit for 10 minutes.
  4. Preheat broiler, place the steak on a rack inside a broiler pan, and broil for 4-5 minutes per side until cooked to 130°F.
  5. Top the steak with garlic butter after broiling and let it rest for 5-10 minutes before slicing against the grain.
