Chimichurri Sauce
  • 1 cup Fresh parsley Finely chopped
  • 3 cloves Garlic Minced
  • 1 medium Fresno pepper Chopped
  • 2 teaspoons Dried oregano
  • 1/2 cup Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • to taste Salt Adjust based on preference
  • to taste Fresh ground pepper Adjust based on preference
Shrimp
  • 1 pound Shrimp Peeled and deveined
  • 1 tablespoon Honey
  • 1 teaspoon Smoked paprika Or regular paprika
  • 1 tablespoon Olive oil For marinating
  • 1 clove Garlic Minced for marinating
  • to taste Salt Adjust based on preference
  • to taste Pepper Adjust based on preference

Method
 

Chimichurri Preparation
  1. Finely chop fresh parsley, garlic, and Fresno pepper by hand. In a medium bowl, mix with dried oregano, salt, and fresh ground pepper.
  2. Drizzle in extra virgin olive oil and red wine vinegar. Stir well to combine and let sit for at least 1 hour.
Shrimp Cooking Steps
  1. Peel and devein shrimp. Toss with olive oil, minced garlic, honey, smoked paprika, salt, and pepper. Marinate for 20 minutes.
  2. Heat skillet over high heat. Add marinated shrimp in a single layer and cook for 2-3 minutes on each side until opaque.
  3. Transfer shrimp to a serving dish and spoon chimichurri sauce over the top.
