  • 3 tablespoons Olive Oil extra virgin oil elevates richness

Method
 

Cooking Steps
  1. Cook pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat, add onion, and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and sauté until fragrant, about 1 minute.
  4. Add chopped tomatoes, salt, and pepper; let simmer for 15-20 minutes until sauce thickens.
  5. Fold in cooked pasta, ensuring it's well coated; stir for 2-3 minutes.
  6. Mix in diced mozzarella until melted, about 2 minutes.
  7. Fold in fresh basil and adjust seasoning to taste.
  8. Optional: Transfer to a baking dish, sprinkle with Parmesan, and bake at 180°C (350°F) for 15-20 minutes.
  9. Allow to rest for a few minutes before serving.
  10. Serve warm, garnished with fresh basil and a drizzle of olive oil.
