Method
 

Step-by-Step Instructions
  1. Bring the prime rib to room temperature—about 1 hour.
  2. Preheat your oven to 450°F (230°C).
  3. Combine kosher salt, coarse ground pepper, and softened butter into a paste and rub it generously over the prime rib.
  4. Place the prime rib on a roasting rack in a pan; roast at 450°F for 20 minutes.
  5. Lower the temperature to 325°F (165°C) and roast until the internal temperature reaches 130°F (54°C).
  6. Add beef broth and water to the pan about 30 minutes before the roast is done.
  7. Sprinkle grated Parmigiano Reggiano over the top and return to the oven for 5-10 minutes.
  8. Let the roast rest for at least 20 minutes before carving.
  9. Carve into slices and serve with pan jus.
