  • 1 cup Sour Cream or Greek yogurt
  • 2 tablespoons Lemon Juice fresh preferred
  • 2 tablespoons Milk any milk alternative
  • 2 tablespoons Prepared Horseradish
  • 1 tablespoon Dijon Mustard or yellow mustard
  • to taste Pepper white or black pepper

Cooking Steps
  1. Preheat your oven to 325°F (160°C).
  2. In a small bowl, mix olive oil, seasoned pepper, minced garlic, dried thyme, and salt until well combined.
  3. Generously apply the seasoning mixture over the boneless beef roast, covering all sides.
  4. Roast the beef uncovered in the preheated oven for 2.5 to 3 hours, aiming for 135°F for medium-rare.
  5. Let the roast rest for 10 minutes before slicing.
  6. Combine sour cream, lemon juice, milk, horseradish, Dijon mustard, salt, and pepper to make the sauce.
  7. Slice the roast against the grain and serve with the creamy horseradish sauce.
