Method
 

Directions
  1. Rinse 1 cup of jasmine rice under cold running water until the water runs mostly clear.
  2. Transfer the rinsed rice to a medium sauce pot. Add 2 cups of water, 1 tablespoon olive oil, 1 teaspoon salt, and 1/2 teaspoon garlic powder. Stir gently to combine.
  3. Cover the pot and bring contents to a boil over medium-high heat, about 5-7 minutes. Stir gently and reduce heat to low.
  4. Let the rice simmer on low heat for 15 minutes without lifting the lid.
  5. Turn off the heat and let sit, covered, for 5 minutes to allow steaming.
  6. Fluff the rice with a fork and stir in 1/4 cup chopped cilantro and 2 tablespoons lime juice. Adjust seasoning if desired.
