- Rinse 1 cup of jasmine rice under cold running water until the water runs mostly clear.
- Transfer the rinsed rice to a medium sauce pot. Add 2 cups of water, 1 tablespoon olive oil, 1 teaspoon salt, and 1/2 teaspoon garlic powder. Stir gently to combine.
- Cover the pot and bring contents to a boil over medium-high heat, about 5-7 minutes. Stir gently and reduce heat to low.
- Let the rice simmer on low heat for 15 minutes without lifting the lid.
- Turn off the heat and let sit, covered, for 5 minutes to allow steaming.
- Fluff the rice with a fork and stir in 1/4 cup chopped cilantro and 2 tablespoons lime juice. Adjust seasoning if desired.
