- In a gallon-size zip lock bag, combine brown sugar, lemon juice, black pepper, salt, soy sauce, olive oil, water, and minced garlic. Seal the bag and gently mix until the ingredients are well combined and the sugar is dissolved.
- Add salmon fillets to the bag, making sure each piece is thoroughly coated. Seal tightly and refrigerate for 1 to 3 hours.
- Preheat grill to medium-high heat, around 375°F (190°C). This ensures perfect sear on salmon.
- Cut heavy-duty aluminum foil into large squares and fold up the sides to create shallow boats for each salmon fillet.
- Lay each marinated salmon fillet in the foil boats, skin-side down, and pour a bit of leftover marinade on top.
- Place foil packets on the grill and cook for 15 to 18 minutes, until salmon flakes easily and appears slightly translucent.
- Optionally flip salmon for 1 to 2 minutes for grill marks. Serve immediately, drizzled with leftover marinade.
