Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a lightly greased loaf pan.
  2. Combine plain breadcrumbs with milk in a small bowl and let soak for 3-5 minutes.
  3. Sauté chopped yellow onion, diced green bell pepper, and minced garlic in olive oil over medium heat for about 4 minutes.
  4. Mix ground beef, soaked breadcrumbs, egg, Worcestershire sauce, salt, and pepper in a large bowl, then fold in sautéed vegetables.
  5. Transfer the meat mixture into the loaf pan, shaping it evenly.
  6. Bake in the oven for approximately 45 minutes, until the internal temperature reaches 160°F (70°C).
  7. Sear thinly sliced beef in a skillet over medium-high heat for 2-3 minutes.
  8. In the same skillet, sauté additional onions and bell peppers for 4-5 minutes.
  9. Layer the seared beef and sautéed vegetables on top of the baked meatloaf, then sprinkle shredded provolone cheese.
  10. Return to the oven for 5-7 more minutes, until the cheese is melted and bubbly.
  11. Let the meatloaf rest for 10 minutes before slicing.
  12. Serve warm on hoagie rolls topped with extra cheese and onions or alongside creamy mashed potatoes.
