Preparation
- Start by lining a 12-cup muffin tin with paper liners or lightly spray each cup with cooking spray.
- In each muffin cup, measure one tablespoon of your chosen granola and evenly distribute it as the base layer.
- In a medium mixing bowl, whisk together Greek yogurt, peanut butter, and vanilla protein powder until the mixture is completely smooth and creamy.
- Carefully fill each muffin cup with the yogurt mixture, filling it about three-quarters full.
- Place the filled muffin tin in the freezer and allow it to freeze for 30 minutes.
- Melt chocolate chips along with coconut oil in a microwave-safe bowl, heating in 30-second intervals until fully melted and smooth.
- Remove the muffin tin from the freezer, drizzle the melted chocolate over each yogurt cup, and sprinkle any remaining granola on top.
- Return the muffin tin to the freezer for another 45 minutes or until the bites are fully firm.
- After the second freeze, pop the Protein Frozen Yogurt Bites out of the muffin tin and store them in an airtight container.
