Method
 

Step-by-Step Instructions
  1. Wash the cucumbers thoroughly under cold water. Slice them into bite-sized pieces and place them in a large mixing bowl.
  2. Gently fold in the fresh blueberries and sliced almonds into the bowl with the cucumbers.
  3. Take the fresh mint leaves, stack them, and roll tightly. Slice into thin ribbons and add to the salad.
  4. In a small bowl, whisk together lemon juice, olive oil, honey or maple syrup, salt, and pepper until emulsified.
  5. Pour the vinaigrette over the salad mixture and gently toss until evenly coated.
  6. Serve immediately or refrigerate for up to 30 minutes to enhance flavors.
