  • 4 pieces Chicken Thighs Bone-in, skin-on for best flavor
For the Vegetables
  • 1 pound Potato Chunks Baby potatoes or Yukon Gold
  • 1 cup Peas Fresh or frozen
For the Sauce
  • 4 cloves Garlic Minced
  • 1 cup White Wine Or substitute with chicken broth
  • 2 tablespoons Olive Oil
  • 1 tablespoon Butter
For Seasoning
  • 1 teaspoon Oregano Dried
  • 1 teaspoon Thyme Dried
  • 2 tablespoons Fresh Lemon Juice For drizzle before serving

Method
 

Steps to Cook Chicken Vesuvio
  1. Preheat the oven to 375°F (190°C).
  2. Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium heat for about 2 minutes until it shimmers.
  3. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown, then flip and brown the other side for 5 minutes.
  4. Remove the chicken and brown potato chunks in the same skillet for 4-5 minutes.
  5. Stir in minced garlic, dried oregano, and dried thyme, and cook for 1-2 minutes until fragrant.
  6. Pour in white wine and chicken broth, scraping up browned bits from the skillet.
  7. Return the chicken thighs to the skillet and bring to a gentle simmer.
  8. Cover and transfer the skillet to the oven; bake for about 30 minutes.
  9. Add peas about 5 minutes before removing from the oven.
  10. Drizzle with fresh lemon juice before serving.
