  • 2 tbsp Vegetable Oil for moisture and color
  • 3 cloves Garlic minced; can substitute with garlic powder
  • 1 none Lemon Juice can substitute with lime juice
For the Spice Rub
  • 1 tsp Dried Ginger fresh ginger can be an alternative
  • 1 tsp Dried Coriander ground cumin works in its place
  • 0.5 tsp Turmeric omit for a milder flavor
  • 1 tsp Smoked Paprika regular paprika can also be used
  • 1 tsp Salt opt for sea salt if desired
For the Glaze
  • 120 g Mango Chutney processed until smooth; store-bought recommended

Step-by-Step Instructions
  1. Prepare the Marinade: In a medium bowl, whisk together vegetable oil, minced garlic, and lemon juice. Stir in dried ginger, dried coriander, turmeric, smoked paprika, and salt until combined.
  2. Marinate the Chicken: Generously rub the marinade over the whole chicken. Place squeezed lemon halves inside the cavity. Tie chicken legs together and marinate in the fridge for 30 minutes to 4 hours.
  3. Preheat the Oven: Preheat your oven to 190°C (375°F). Let the marinated chicken come to room temperature.
  4. Roast the Chicken: Place marinated chicken on a roasting pan lined with foil. Roast uncovered for 45 minutes until skin is golden brown.
  5. Apply the Mango Chutney Glaze: Brush the chicken with mango chutney and return to the oven for an additional 20-30 minutes. Check for internal temperature of 75°C (165°F).
  6. Rest Before Carving: Allow the chicken to rest for 15-20 minutes before carving to redistribute juices.
