Ingredients
  

For the Pizza Base
  • 1 batch Pizza Dough homemade or store-bought
For the Toppings
  • 1 lb Italian Sausage cooked until crispy
  • 1 medium Onion sliced and caramelized
  • 4 large Eggs cracked onto pizza or added later
  • 2 cups Cheese (Fontina & Pecorino Romano) shredded
For the Spice
  • to taste Hot Sauce for added heat

Method
 

Dough Preparation
  1. If making homemade dough, mix ingredients and let ferment for about 8 hours.
  2. For store-bought, take it out of the fridge and let it rest for about 30 minutes.
Cook Sausage
  1. In a skillet over medium heat, cook Italian sausage for around 10-12 minutes until browned and crispy.
  2. Transfer to a plate lined with paper towels to absorb excess grease.
Caramelize Onions
  1. Add sliced onions and a pinch of salt to the skillet, cooking for about 20 minutes until deeply caramelized.
Shred Cheese
  1. Shred Fontina and Pecorino Romano cheese, aiming for about 2 cups total.
Assemble Pizza
  1. Preheat oven to 500°F (260°C), roll out pizza dough, and layer with crispy sausage, caramelized onions, and shredded cheese.
  2. Optionally create wells for the eggs if baking them on the pizza.
Bake
  1. Bake the assembled pizza for 8-12 minutes until crust is bubbly and golden brown.
Add Eggs
  1. If baking eggs, crack them into the wells now and bake for an additional 3-5 minutes until egg whites are set.
  2. Alternatively, fry eggs separately and add them after baking.
