Ingredients

  • 1 pound lean ground beef ground turkey can be a lighter alternative
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1/4 cup fresh cilantro substitute with parsley if desired
  • 1 teaspoon ground cumin can be replaced with garam masala
  • 1 teaspoon ground coriander a small amount of curry powder can be used if unavailable
  • 1 teaspoon paprika smoked paprika can provide a richer flavor
For the Yogurt Sauce
  • 1 cup Greek yogurt regular yogurt can be strained for thicker consistency
  • 2 tablespoons fresh lemon juice vinegar can be used for acidity if necessary
  • 2 tablespoons fresh dill or mint feel free to experiment based on taste preferences

Method
 

Preparing Koftas
  1. In a large mixing bowl, combine the ground beef with finely chopped onion, minced garlic, cilantro, ground cumin, ground coriander, paprika, salt, and pepper.
  2. Mix the ingredients until well combined, forming a slightly sticky mixture.
  3. With wet hands, form the mixture into oval-shaped patties or skewers, about 1 inch thick.
Cooking Koftas
  1. Preheat the grill to medium-high heat, greasing grates with oil.
  2. Place the koftas on the grill and cook for approximately 5 minutes on each side, or until they reach an internal temperature of 160°F.
Preparing Yogurt Sauce
  1. In a separate bowl, mix Greek yogurt with fresh lemon juice and finely chopped dill or mint.
  2. Season with salt and pepper to taste and allow to rest for at least 10 minutes before serving.
Serving
  1. Once koftas are cooked, let them rest briefly before serving alongside the yogurt sauce.
