  • 2 tablespoons scallions or chives for garnish

Step-by-Step Instructions
  1. Prep Dredging Station: In one bowl, beat together 2 large eggs. In another bowl, mix 1 cup of flour, 1/2 cup of cornstarch, 1 teaspoon of salt, and 1/2 teaspoon of pepper.
  2. Coat Chicken: Dip chicken pieces into the egg mixture, then toss in the flour mixture to coat evenly.
  3. Fry Chicken: Heat oil in a skillet to 350°F and fry chicken pieces in batches for 4-5 minutes until golden brown.
