- In a large bowl, toss shrimp with olive oil, Cajun seasoning, paprika, salt, and pepper. Marinate for 15–30 minutes.
- Soak wooden skewers in water for 30 minutes. Thread marinated shrimp onto skewers.
- Preheat grill or grill pan over medium-high heat, around 400°F (200°C).
- Grill shrimp for 2–3 minutes on each side until pink and opaque.
- Melt butter in a bowl and stir in garlic, lemon juice, and paprika. Mix well.
- Brush grilled shrimp with garlic butter sauce.
- Transfer to a serving platter, sprinkle with chopped parsley, and serve with lemon wedges.
