For the Sandwich
  • 2 slices Sourdough Bread gluten-free bread works too
  • 1 tablespoon Unsalted Butter olive oil works for vegan alternative
  • 8 ounces Roast Beef turkey or ham can be substitutes
  • 4 ounces Sharp Cheddar Cheese Swiss or provolone can be used
  • 1 tablespoon Dijon Mustard optional, can omit for mayo
  • 1 cup Fresh Greens arugula or spinach are excellent

Method
 

Step-by-Step Instructions
  1. Preheat a large non-stick skillet over medium heat for about 3–5 minutes.
  2. Spread 1 tablespoon of unsalted butter on one side of each slice of sourdough bread.
  3. Place one slice of sourdough bread butter-side down in the skillet, add Dijon mustard if using, layer with roast beef and cheese.
  4. Top with another slice of sourdough bread butter-side up and press down gently.
  5. Cook for about 3–5 minutes until the bottom is golden brown and cheese begins to melt.
  6. Flip the sandwich and cook for another 3–5 minutes until both sides are golden and cheese is melted.
  7. Remove from skillet, let cool slightly, then cut in half to serve.
